Recipe: Aji Amarillo Shepherd's Pie

Ingredients:

  • 1 lb ground beef or a mix of beef and pork

  • 1 cup onions, raisins and black olives, finely chopped

  • 2 cloves garlic, minced

  • 2 tablespoons Aji Amarillo paste (adjust to taste)

  • 1 teaspoon cumin

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 cup peas (fresh or frozen)

  • 4 large potatoes, peeled and cubed

  • 1/2 cup heavy cream or milk

  • 4 tablespoons unsalted butter

  • Additional Aji Amarillo paste for mixing into the mashed potatoes (adjust to taste)

  • Fresh cilantro for garnish

  • Parmesan cheese

 

Instructions:

  1. Prepare the Filling:
    In a large skillet over medium heat, add a little oil and sauté the onions until translucent, about 5 minutes. Add the minced garlic , raisins and black olives and cook for another minute.

  2. Add the Meat:
    Add the ground beef (or mixture) to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes. Stir in the Aji Amarillo paste, cumin, salt,and black pepper. Mix until well combined, allowing the flavors to meld together.

  1. Incorporate Peas:
    Stir in the peas and cook for an additional 3-4 minutes until heated through. Once cooked, remove from heat and set aside.

  2. Prepare the Mashed Potatoes:
    In a large pot, boil the peeled and cubed potatoes until tender, about 15-20 minutes. Drain and return them to the pot. Add the milk, butter, and additional Aji Amarillo paste to taste. Mash until smooth and creamy, ensuring the Aji Amarillo is well incorporated for that distinctive flavor.

  3. Assemble the Pie:
    Preheat your oven to 350°F (175°C). In a baking dish, layer the meat filling at the bottom. Spread the Aji Amarillo-infused mashed potatoes on top, smoothing it out to create an even layer.

    Place the assembled Shepherd's Pie in the preheated oven and bake for about 20 min after add the parmesan cheese for another 5-10 minutes, or until the top is golden brown and slightly crisp.
